सेवई की खीर कैसे बनायें: Sevaiya kheer recipe in hindi:

Preparation time:
3-4 minutes (needs a pan or any other cooking vessel will also do )

Cooking time:
5-7 minutes



Ingredients:
  • litre-Milk
  • Teaspoon Ghee
  • Cinamon (Elaichi)
  • 1 pack of vermicelli (seeviyaan) {300g or as your requirement}
  • Sugar-250gram or as required
  • Condensed milk (50gram){Amul mithai made or as available nearby}
  • Dryfruits (whole,chopped or powdered)
  • Badam for (garnishing)

Procedure:
  • Take a pan and let the ghee melt
  • Then add cinnamon(elaichi),leave it for about 2 seconds
  • Now, add vermicelli(seeviyaan),roast it until it turns golden brown and don’t overcook it, concentrate on it while cooking(if the packet already contains golden brown vermicelli then just add it to milk)
  • Include milk to the mixture and simmer it until the vermicelli becomes soft
  • Put in sugar
  • Add condensed milk
  • Add dryfuits
  • Let it boil until bubbling occurs.
  • Garnish it with chopped badam(cut in small slices) 

Note: Serves four people. You can use sugar free for a diabetic patient. The quantity of the ingredients can be increased or decreased according to the number of people. Condensed milk is not a core ingredient; you can skip it if unavailable.

Gajar Ka Halwa Recipe, How to Make Gajar Ka Halwa | गाजर का हलवा | Rasoi Ka Swad

Gajar Ka Halwa –Winter Picked Menu:

Preparation time:
10-15 minutes (needs a pressure cooker or any other rice cooking vessel will also do )




Cooking time:
 
10-15 minutes 

Ingredients:

1kg Carrot
250 gms Mava (remains of a spoiled-milk)
5 Ilaichi
8 cups of Milk
7 cups of sugar
10gms dry fruits
4 teaspoons of Ghee

How to Make Gajar Ka Halwa:

Procedure:
  1. Wash the carrots and peal the hairs on its skin.
  2. Mash all of them and keep it a side for 2 minutes. Till then take a pan or Dekchi boil required amount of ghee into it.
  3. Add Ilaichi by separating the black pearls like balls and its cover together in the hot ghee.
  4. Add mashed carrot into the hot ghee mixture, let the aroma of Ilaichi, work its wonders.
  5. Add some sugar into it.
  6. Sauté the entire ingredients evenly, unless the water of the carrot is dried up after adding sugar. Let the mixture of the carrot turn dark red colour.
  7. Later on, add some milk and again sauté for 5 minutes
  8. After sometime add Mava that is the (remains of the spoiled milk). Ensure that you break it into soft uneven balls.
  9. Add the said amount of dry fruits you can either add the readymade powder of it or cut them into small fine pieces and mix them into the mixture.
  10. Sauté every time you add something into the mixture.
  11. Close the lid of the vessel tight for 10 minutes. Garnish it with some dry-fruits and serve hot.
  12. You can also preserve it for 5 days as its one of the, most mouth-watering dessert and can stay fresh for longer time.

Note: Gajar ka Halwa can be served hot and cold both. If you like totting-up more Mava and sugar, you can add as per your taste. For diabetic patients use sugar free instead of normal sugar.

Soybean Rice Recipe | Soya Chunks Biryani Recipe | How to make Soya Pulao | Indian Rice Recipes

How to make Soya Pulao:

Preparation time:
10-15 minutes (needs a pressure cooker or any other rice cooking vessel will also do )
Cooking time:
10-15 minutes



Soya Rice Recipes:

Ingredients:
½ kg normal or basmati rice
1-bowl of Soybeans soaked in salt-water
2-Oninons
1-Tomatoes
7 curry leaves
2-full teaspoon of ginger garlic paste (200gm)
Fistful coriander fresh leaves
6-7 sorted sticks of mint leaves
1-teaspoon chilli powder
½ teaspoon turmeric powder
1- Teaspoon coriander powder
1-teaspoon Garam Masala 
1-Teaspoon any Biryani Masala (Lazeez pereferable brand for Biryani masalas)
1-clove
1-cardamom
1-teaspoon salt (as per taste)
250 ml preserved water (adding boiled water keeps the taste ,maintained)
Small piece of cinnamon stick

Procedure of cooking:

Ø  Soak rice for half an hour depending on the people you are going to serve.
Ø  Soak soybeans in a hot water by adding a pinch of salt in it for 10 minutes.
Ø  Heat oil in the cooker or other vessel
Ø  Cut onions (length-wise cut) fry them and let them fry in the hot oil by adding, cloves and cardamom into it.
Ø   Add ginger garlic paste. Sautee the ingredients for about 5-10 minutes, let it fry until the onion turns brown.
Ø  Add mint, tomatoes and half coriander leaves into the mixture, cook until it’s squashy.
Ø  Now drain the water of the soaked soybean and add it to the mixture
Ø   Add all the spices like red Chilli Powder, Garam Masala, Biryani Masala and Coriander Powder. (As per taste). Add curry leaves too. If you want, you can use green chillies also.
Ø  Merge up the mixture until it turns into a paste.
Ø  Drain the water in which you soaked rice and add the rice above the mixture.
Ø  Make sure that you add preserved water into the mixed rice and Masala’s or spices.
Ø  Either pressure cook for about 2 ½ whistles or let it boil in a vessel , at a fast flame as soon as you see boils rising up medium the flame and it will cook into the same itself.
Ø  Add salt as per your taste.
Ø  Garnish with fresh half left coriander leaves
Ø  Serve hot with some vegetable curry or Raitha


Note: Serves for 4 people, you can increase the quantity of ingredients as you want to if there are many people to eat. You can also add some vegetables to it.

Rajma Pulao - Rajma Biryani - Recipe with Red Kidney Beans

Rajma Pulao - Rajma Biryani - Recipe with Red Kidney Beans:


Preparation time: 10 minutes ( includes pressure cooking step)

Cooking time: 15-20 minutes

Ingredients

1 cup Basmathi Rice
1 cup Rajma/Kidney beans
1 onion
1 ½ tomatoes
¼ tsp ginger-garlic paste
Fistful coriander leaves
Few mint leaves
1 tsp chilli powder
1tsp coriander powder
¾ tsp Briyani masala (I used sakthi masala’s powder, it can be replaced with garam masala)
1 clove
1 cardamom
Small piece of cinnamon stick

How to make it

  • Soak the kidney beans with enough of water over night. Pressure-cook it, the next day for about 5 whistles. Add pinch of salt to it for cooking. Keep aside.
  • Soak rice with 2 ½ cups of water for about 15 minutes.
  • In a wok heat oil and add cloves, cinnamon and cardamom to it. Then add onions (length-wise cut) to it. Fry till transparent.
  • Add ginger-garlic paste to it. Sautee it till the raw smell goes off.

  • Add mint and few coriander leaves (keep some for garnishing). Stir well.

  • Add tomatoes and cook till mushy. Now add chilli powder, coriander powder and briyani masala to it.

  • Mix it completely. It ll come as a paste. Add the cooked rajma to it, mix well.
  • Now add the soaked rice without water (preserve it). Mix and check for salt.



  • Add the preserved water to it.

  • Either pressure cook for 2 whistles or cook in medium flame in the wok itself.
  • Garnish with coriander leaves.
  • Serve hot with raitha

Cabbage Kofta Recipe | How to Make Cabbage Kofta:

कद्दूकस किये हुये पत्तागोभी में बेसन, देशी कुटे मसाले मिलाकर बनाये कोफ्ते और टमाटर की मसालेदार ग्रेवी से बनी पत्तागोभी कोफ्ता करी के स्वाद को आप बहुत पसंद करेंगे. इसे हम चपाती, चावल ओर परांठे के साथ परोस सकते हैं.

आवश्यक सामग्री - Ingredients for Cabbage Kofta Recipe

कोफ्ते के लिये
  • पत्तागोभी - ½ ( 200 ग्राम)
  • हरी मिर्च - 1 (बारीक कटी हुई)
  • नमक - ½ छोटी चम्मच
  • लाल मिर्च पाउडर - ¼ छोटी चम्मच
  • धनिया पाउडर - ½ छोटी चम्मच
  • हरा धनिया - 2-3 टेबल स्पून (बारीक कटा हुआ)
  • बेसन - 1/2 कप
  • तेल - तलने के लिए
ग्रेवी बनाने के लिए
  • टमाटर - 4- 5 (200 -250 ग्राम)
  • अदरक - 1 इंच लम्बा टुकड़ा
  • हरी मिर्च - 1
  • तेल - 2 -3 टेबल स्पून
  • जीरा - ½ छोटी चम्मच
  • हींग - 1 पिंच
  • हल्दी पाउडर - ¼ छोटी चम्मच
  • धनिया पाउडर - 1 छोटी चम्मच
  • कसूरी मेथी - 2 छोटी चम्मच
  • लाल मिर्च पाउडर - ¼ छोटी चम्मच
  • नमक - 1 छोटी चम्मच से कम या स्वादानुसार
  • गरम मसाला - 1/4 चौथाई छोटी चम्मच से कम

विधि - How to make Cabbage Kofta Recipe:

पत्तागोभी को कद्दूकस कर लीजिए. इसमें कटी हुई हरी मिर्च, नमक, लाल मिर्च पाउडर, धनिया पाउडर, थोडा़ सा हरा धनिया और 4-5 टेबल स्पून बेसन डाल दीजिए. सभी चिजों को अच्छी तरह मिला लीजिए. कोफ्ते बनाने के लिए मिश्रण तैयार है.
कढ़ाई में तेल डालकर गरम कीजिये, मिश्रण से थोडा़-थोडा़ मिश्रण निकाल कर गोले बनाकर तैयार कर लीजिए.
अच्छे गरम तेल में कोफ्ते डालें या कढ़ाई में एक बार में जितने कोफ्ता आ जाएं, डाल दीजिये. इन्हें पलट-पलट कर ब्राउन होने तक तल लीजिये. तले हुये कोफ्ते प्लेट में निकाल कर रख लीजिये. दूसरे कोफ्ते कढ़ाई में डालिये और इसी तरह तल कर निकाल लीजिये, सारे कोफ्ते इसी तरह तल कर तैयार कर लीजिये.
ग्रेवी बनाने के लिए
टमाटर को धोइये, हरी मिर्च और अदरक भी धो लीजिये और बड़े टुकड़ों में काट लीजिये, टमाटर के साथ मिलाकर बारीक पीस कर पेस्ट बना लीजिये.

कढ़ाई में 2 टेबल स्पून तेल डालकर गरम कीजिये. गरम तेल में जीरा, हींग, हल्दी पाउडर, धनिया पाउडर और कसूरी मेथी डालकर हल्का सा भून लीजिए. टमाटर, अदरक, हरी मिर्च का पेस्ट डालिये और धीमी आंच पर मसाले को तब तक भूनिये जब तक कि मसाले के ऊपर तेल तैरता न दिखाई देने लगे. मसाले से तेल अलग होने लगा हो तो इसमें 2 -3 टेबल बेसन डालकर 2-3 मिनिट और भूनिये.
लाल मिर्च पाउडर डाल दीजिए और मसाले को लगातार चलाते हुए 2 मिनिट के लिए भून लीजिए. मसाले से तेल अलग होने पर, 1 कप पानी डालकर नमक, गरम मसाला डाल दीजिए. ग्रेवी को ढककर 4-5 मिनिट के लिए पकने दीजिए.
ग्रेवी बनकर तैयार है, इसमें थोडा़ सा हरा धनियां डालकर मिला दीजिए. कोफ्ते डाल कर ढक दीजिये.
पत्तागोभी के कोफ्ते की सब्जी बनकर तैयार है. सब्जी को प्याले में निकालिये और हरा धनिया डाल कर सजाइये. गरमा गरम पत्तागोभी कोफ्ते की सब्जी को चपाती, परांठे, नॉन या चावल किसी के साथ परोसिये और खाइये.

सुझाव:
  • कोफ्ते के लिये ग्रेवी आप अपने पसन्द की बना सकते हें, ग्रेवी में प्याज डालना चाहते हैं, तब 1-2 प्याज बारीक कटी हुई, जीरा भूनने के बाद डालें और हल्का गुलाबी होने तक भूनें, और सब्जी को बिलकुल इसी तरह मसाले डालकर बनायें.
